The unrefined cane product contains minerals and compounds absent in processed sugar, which some experts argue make it more conducive to weight management efforts.

The primary distinction between jaggery and white sugar lies in their processing. While white sugar undergoes extensive refinement that strips away molasses and minerals, jaggery retains these components. This gives the traditional sweetener a marginally lower glycemic index, meaning it causes a slower, more gradual rise in blood sugar levels compared to refined alternatives. Such a measured glucose response can help reduce sudden energy spikes and crashes that often trigger increased appetite.
