Many home cooks struggle with rotis that fail to puff up properly on the tawa, remaining dense and tough instead of achieving the desired soft texture. While griddle quality and cooking temperature play a role, the foundation for perfect rotis begins with the dough-making process itself.

The kneading technique is crucial for roti success. The dough must be kneaded thoroughly to develop the right consistency—neither too dry nor too wet. Flour should be gradually incorporated with water, and the dough should be worked until it reaches a smooth, elastic texture. This proper kneading helps develop gluten, which enables the roti to puff up when heated.

Resting time is equally important but often overlooked by home cooks. After kneading, the dough should be allowed to rest for at least 30 minutes, preferably longer. This resting period allows the flour to fully absorb moisture and helps the gluten relax, making the dough easier to roll and more likely to puff during cooking.

When rolling rotis, even thickness throughout ensures uniform cooking and better puffing. The dough should be rolled gently and evenly, without applying excessive pressure that would compress it. Once on the tawa, allow the roti to cook on medium-high heat until bubbles form, which indicates proper puffing.
