Scientists at Southern Illinois University Carbondale have unveiled a novel approach to tackling two global challenges simultaneously: plastic waste accumulation and food scarcity. Their innovation involves transforming plastic waste and agricultural byproducts into edible protein cookies through a process involving engineered microorganisms.

The cookies, branded as µBites, are manufactured using polyethylene terephthalate (PET) plastic sourced from discarded beverage bottles, combined with agricultural residues such as corn stalks and leaves. Genetically programmed yeasts are employed to break down the processed waste materials and convert them into proteins, fats, organic acids and flavouring compounds that form the basis of the final product.

The project, which has links to NASA, is specifically designed to create viable food solutions for environments with limited resources and infrastructure. Beyond addressing terrestrial food security challenges, the technology holds particular promise for supporting deep-space missions where resupply options are severely constrained.

This development represents a convergence of sustainable waste management and nutritional science, offering potential applications across multiple sectors from humanitarian food assistance to long-duration space exploration programmes. The research underscores growing efforts to develop circular economy solutions that transform waste streams into valuable resources.
