Singapore chef builds culinary bridge in Mexico with Latin America's sole local restaurant

What began as a life change driven by matters of the heart has evolved into a culinary mission spanning a continent. Maryann Yong, a Singaporean chef, moved to Mexico and partnered with her Mexican husband to launch Makan, a restaurant dedicated to showcasing the island nation's distinctive flavours to a region largely unfamiliar with Southeast Asian cuisine.

The restaurant operates as a unique cultural ambassador in Latin America, where Singaporean dining establishments remain virtually non-existent. Through Makan's menu, Yong presents traditional and contemporary interpretations of Singapore's multicultural food heritage, blending influences from Chinese, Malay, and Indian culinary traditions that define the island's gastronomic identity.

Beyond commercial success, the venture has prompted deeper introspection for Yong about representation and authenticity. Operating thousands of kilometres from Singapore, she has grappled with questions about how to meaningfully convey her homeland's food culture to diners with no prior exposure to it. This challenge has reshaped her understanding of what it means to cook as a cultural custodian in unfamiliar territory.

The restaurant's establishment underscores growing international interest in Asian cuisine while highlighting the significant gaps in Latin American familiarity with Southeast Asian food. Makan stands as both a business enterprise and a personal project through which Yong continues to explore her connection to home.
