Amla, a staple fruit in Indian cuisine and traditional medicine, has long posed storage challenges for households. The fruit's tendency to soften and darken rapidly has made preservation difficult, often resulting in waste. However, simple preparatory techniques applied before refrigeration can substantially improve storage outcomes.
The first recommended step involves thorough cleaning of the fruit under running water to remove dirt and surface contaminants. A gentle scrub with a soft cloth helps eliminate any residual impurities without damaging the delicate skin. This initial cleaning reduces bacterial growth that accelerates spoilage.
The second step requires complete drying of the amla before storage. Moisture on the fruit's surface promotes fungal development and decay. Using a clean, dry cloth to pat each fruit thoroughly removes excess water and creates conditions less favourable to decomposition.
The third technique involves storing amla in airtight containers or sealed plastic bags, which maintains a controlled moisture environment within the refrigerator. Alternatively, wrapping individual fruits in newspaper before placing them in containers provides additional protection from ethylene gas and external contaminants. When stored using these methods in the coldest section of the refrigerator, amla can remain fresh for several months, allowing consumers to extend availability of this vitamin C-rich fruit beyond its natural season.
